Job duties:
• Supervise kitchen staff in preparing sushi, poke, and other menu items, ensuring all stations operate efficiently during peak and off-peak hours.
• Train employees on TORO TORO’s preparation methods, including portioning, assembly standards, and safe handling of fresh seafood and produce.
Prepare and assemble sushi rolls, poke bowls, and signature items as needed to maintain consistent speed and quality of service.
• Check ingredient freshness, visual presentation, and adherence to TORO TORO’s standardized recipes, correcting inconsistencies immediately.
• Monitor daily stock of fresh fish, toppings, sauces, and packaging materials, arranging timely replenishment to support continuous production.
• Communicate operational updates, menu changes, and service priorities with the Operations Manager to keep workflow aligned with store demands.
• Implement portion control, reduce waste, and ensure accurate assembly of bowls and rolls to maintain food-cost targets and product consistency.
• Troubleshoot bottlenecks in the sushi and poke line, resolving staff or production issues quickly to maintain TORO TORO’s fast-casual service pace.
• Minimum 2 years of experience in a senior role within a kitchen environment is required; 3 years is preferred, especially in sushi, poke, or fast-casual food operations
• Secondary school education or equivalent is required.
• Ability to train and guide staff on preparation standards, hygiene practices, and portion control.
• Strong knowledge of food safety and the proper handling of fresh ingredients.
• Good communication and organizational skills to manage workflow and maintain consistent service quality.
• Strong teamwork skills, with the ability to maintain a positive and cooperative work atmosphere.
• Reliable, adaptable, and able to remain calm and effective during high-volume or fast-paced service periods.
